First, Shopify measures your entire store session while pixels only measure the events on the pages it’s set to fire on. Secondly, Shopify only counts 1 add to cart if a shopper reaches the cart page in the same session, while Omega pixel counts 1 every time the ATC button is clicked.
E.g. If a shopper clicks the ATC button twice but doesn’t visit the cart page → Shopify will report 0 ATC for that session, while Omega server-side pixel will report 2 ATC events.

If I don’t turn on server-side tracking for my pixel, will I still see collected events in the Dashboard?
